A friend of mine from Rochester loved to boast about the city's famous 'Garbage Plate,' her favorite indulgence whenever she's back home. Brace yourself. A Garbage Plate consists of: fries, pasta salad, mac n cheese, baked beans, cheese burgers (or hot dogs), eggs, meat sauce, onions and mustard!! Since that version would wreak havoc on my stomach, I decided to make my very own Garbage Salad.
Instructions:
- Dice desired amount of chicken breast. Allow to sit for 30 minutes in lemon juice, coconut oil, garlic, and white onions.
- Grill chicken until brown. Throw in chopped green peppers, broccoli, cauliflower, corn, and any other veggies you prefer. Cook until veggies are soft.
- Chop one head of organic Romaine lettuce and one half of an avacado add to large bowl. Add a table spoon of your favorite dressing (try this) and coconut oil.
- Add cooked food to salad and toss (or shake in tupperware) until dressing/oils are evenly distributed.
