Garbage Salad

A friend of mine from Rochester loved to boast about the city's famous 'Garbage Plate,' her favorite indulgence whenever she's back home. Brace yourself. A Garbage Plate consists of: fries, pasta salad, mac n cheese, baked beans, cheese burgers (or hot dogs), eggs, meat sauce, onions and mustard!! Since that version would wreak havoc on my stomach, I decided to make my very own Garbage Salad. 

Instructions:
  1. Dice desired amount of chicken breast. Allow to sit for 30 minutes in lemon juice, coconut oil, garlic, and white onions. 
  2. Grill chicken until brown. Throw in chopped green peppers, broccoli, cauliflower, corn, and any other veggies you prefer. Cook until veggies are soft. 
  3. Chop one head of organic Romaine lettuce and one half of an avacado add to large bowl. Add a table spoon of your favorite dressing (try this) and coconut oil. 
  4. Add cooked food to salad and toss (or shake in tupperware) until dressing/oils are evenly distributed.
