Guacamole Greatness: 3 Recipes

Guacamole is one of those guilt-free foods that make everything taste better. The key to keeping it healthy is making it on your own without adding salt! Avocados are vitamin rich and their creamy texture is a great substitute for cheese and butter. 

JENNIFER'S GUACAMOLE

Instructions:
1. Finely dice white onions, green peppers, and cilantro (I like to grill the veggies for 2 minutes).
2. Mash an avocado in a bowl. 
3. Add diced veggies and a teaspoon of olive (or coconut oil) to bowl and mix until creamy.



Here are three of my favorite guac recipes that are gluten/dairy free, easy to make, and just plain delicious. Enjoy!

MEXICAN OMELET 
Instructions:
1. Heat gluten free wrap until warm (not too crispy so you can fold it into a burrito).
2. Thinly dice white onions and stir-fry in a teaspoon of coconut oil. Add tomatoes and cilantro for more flavor. 
3. Scramble an egg and fry it in coconut oil. Do not add any spices/salt (the onions will add flavor!)
4. Lay the egg with a tablespoon of guacamole on the wrap. 
5. Finish by adding the onions and wrap the tortilla. 



 GUACAMOLE TOAST
Instructions:
1. Heat gluten free bread until crisp (can be toasted or lightly grilled in coconut oil).
2. Spread on guacamole and top with thinly sliced tomato pieces. 
3. Drizzle with each slice with extra-virgin olive oil (or coconut oil). 



CHIPS & DIP
Instructions:
1. Heat 2 gluten free wraps until crisp (The crisper it is, the easier it will be to break into chips).
2. Lightly break each wrap into triangle sized pieces. 
3. Dip into guacamole.

Chicken Fingers & French Fries

One of the tricks of successfully going gluten and dairy free is to be armed with tasty new recipes and snacks. By looking forward to your new meals, you won't even think about what you're giving up!

This is my twist on the classic 'Chicken Fingers & French Fries' that will leave you feeling satisfied but never bloated. I especially like making it when I have company over who are slightly nervous about my cooking. The look on their face after the first bite is priceless!
Instructions: 
  1. Prep: The night before cooking, clean and marinate chicken. To marinate, I like to use a tablespoon of lemon juice, a pinch of Adobo seasoning, chopped onions, and a tablespoon of extra virgin olive oil. Let it sit overnight. 
  2. French Fries: Preheat the oven to 350 degrees. Line a baking pan with aluminum foil then lightly cover with olive oil. Cut up the sweet potato into thirds and cut vertically into fries. Spread fries over pan and lightly sprinkle salt (or seasoning of choice). Bake for 30 minutes until tender.
  3. Chicken fingers: Scramble an egg in a wide bowl. Spread a thick layer of gluten free  flour on a plate. Dip marinated chicken into egg yolk completely then lay flat on flour and flip so chicken is completely white. Once all chicken is flowered. Heat frying pan with a thin layer of olive oil and let the pan heat for a full minute. Fry chicken until golden brown.


For dessert, chop up a Gala apple and sprinkle with cinnamon. This is also a great substitute for chips when you're watching television and just need something to munch on!
